Veggie Packed Orzo Salad

I love making a big, colorful, nutritious salad to keep in the fridge to eat for lunch during the week or as a side at dinner.

I used orzo here but you could easily use Farro instead.

This is easy peasy so it barely requires a recipe!

Cook your orzo or farro as instructed on the box and then let cool. Add a little olive oil to the bowl. Add Artichokes, Capers ⁣, Black Olives, Baby Broccoli ⁣(blanched and then warmed in oven), Shiitake mushrooms (sautéed in garlic), Oregano⁣⁣ and Feta - add anything else you like- asparagus, roasted peppers, red pepper flakes and parsley would be a good additions!
