Roasted Carrots with a Mediterranean Vibe

Originally made for a Thanksgiving side but I would easily eat and serve to my family any day of the week paired with roasted potatoes and a big side salad for an all veggie meal or it would also pair great with a white fish 🐠 it’s a quick, healthy and interesting side to elevate any weekday meal!

Directions

  1. Slice your carrots on a slant (on the bias!) and place them in baking pan. πŸ₯•πŸ₯•πŸ₯•

  2. Add olive oil, salt, pepper, whole garlic cloves (smashed) and a couple cinnamon sticks to the pan. * I used a ton of garlic - about 10 cloves πŸ§„

  3. Bake on 375 for about 20 mins. Keep an eye on them- you want them baked but you also want them to hold color and have crunch!

  4. When finished baking - Take cinnamon sticks out and let carrots cool. 

  5. While carrots are cooling chop some mint leaves and parsley - transfer carrots to a big bowl and add the mint and parsley when they cool 🌿🌱

  6. Secret ingredient!!! Add sumacπŸ’₯

  7. Mix all together and serve solo or drizzle tahini!!πŸ‘Œ
