Roasted Carrots with a Mediterranean Vibe
Thanks for stopping by! ππ»ββοΈ Here is the recipe for these vibrant, flavorful, and nutrient packed carrots. Originally made for a Thanksgiving side but I would easily eat and serve to my family any day of the week paired with roasted potatoes and a big side salad for an all veggie meal or it would also pair great with a white fish π itβs a quick, healthy and interesting side to elevate any weekday meal!
Directions
Slice your carrots on a slant (on the bias!) and place them in baking pan. π₯π₯π₯
Add olive oil, salt, pepper, whole garlic cloves (smashed) and a couple cinnamon sticks to the pan. * I used a ton of garlic - about 10 cloves π§
Bake on 375 for about 20 mins. Keep an eye on them- you want them baked but you also want them to hold color and have crunch!
When finished baking - Take cinnamon sticks out and let carrots cool.
While carrots are cooling chop some mint leaves and parsley - transfer carrots to a big bowl and add the mint and parsley when they cool πΏπ±
Secret ingredient!!! Add sumacπ₯
Mix all together and serve solo or drizzle tahini!!π
