Thailand Memories and Hot & Sour Noodle Soup 🇹🇭

🥢 When I was in Thailand a few years ago I had the most incredible experience. I spent the day in the home/garden of a local family while they hosted a Traditional Thai cooking class. We picked our own ingredients and then prepared them. In all of my travels over all of the years this is still one of my favorite and most special experiences I’ve ever had! 2 Photos below from that day ❤️

Here is my play on Tom Yum Soup 🇹🇭 Not only does it bring back all the warm and fuzzy Thailand memories for me but it’s also flavorful, interesting, packed with nourishing and nutritious ingredients, so grounding - perfect for a cold weekend night. Not sure what to call it- For now it’s the NLG Health Hot & Sour Noodle Soup 🥢⁣

🍜Ingredients and Method 🍜⁣⁣

Toasted Sesame oil ⁣⁣

Garlic (2 cloves)⁣

Ginger (1 in. knob peeled & grated)⁣⁣

Sliced Shallot⁣s (about 1/2 cup) ⁣

Mushrooms (about a cup⁣)

Kale (about a cup)⁣⁣

Cherry Tomatoes (about a handful)⁣⁣

Lemon grass (about two 4 inch stalks cut up)⁣

Kefir Lime leaf (about 6-8 leafs)⁣

Thai basil (about a cup roughly chopped)⁣⁣

Salt, pepper ⁣⁣

Siracha (a few splashes!⁣)⁣

Rice wine vinegar (a few splashes!⁣)⁣

Vegetable stock (about 4 cups) ⁣⁣

•Use toasted sesame oil to coat the bottom of a soup pot. Add the garlic, ginger & veggies first- let that simmer a few mins then toss in the rest of the ingredients. Let all cook through. Add a few splashes of Siracha for Spice and Rice Wine Vinegar for Sour. ⁣⁣

•Add vegetable stock (or chicken stock) to the sauté, let simmer on medium to low heat stirring occasionally until veggies are cooked and you can smell the aromatics in the broth. ⁣⁣

•Cook noodles in a separate pot as directed on package I used rice noodles from our local Asian market but you can use whatever noodles you want. Kelp noodles might work well. NOTE: most of these types of noodles can be tricky- set a timer and follow directions on package! Ours called for soaking in water first- don’t skip this step! ⁣⁣

•When noodles are ready add veggie broth mix and noodles to bowl to enjoy! 🥢🍜⁣⁣

NOTE: the lime leafs and the lemon grass are for flavor only. They are OK to eat but I spoon mine out once the dish is finished cooking. They are tough and taste like actual leaves and grass ;)
